Pumpkin Streusel Coffee Cake

Innkeepers love to share their recipes. Here is one we got froSharon Fastnaught from Brictoria Cottage in Charlotte Hall, Maryland. She writes:

You asked for a favorite recipe and the following would be one of those that I love using this time of year.

Pumpkin Streusel Coffee Cake
1- box yellow cake mix
1 c. pumpkin (puree)
3 eggs, beaten
3 Tbl. oil
1/3 c. water OR buttermilk
1 tsp. pumpkin pie spice
1 1/3 c. packed brown sugar, divided
1 c. flour
2 tsp. cinnamon, divided
1/2 c. butter, softened
Combine cake mix, pumpkin, eggs, oil, water/milk, and pie spice. Mix well.
Pour 1/2 of the batter into a greased 13×9 dish. Set remaining batter aside.
Mix 1/3 c. brown sugar and 3/4 t. cinnamon, sprinkle over the batter in dish.
Carefully spread remaining batter over top.
Combine flour, remaining brown sugar, remaining cinnamon and butter. Mix well and spread evenly over top of batter.
Bake at 325 for 30-40 minutes, until toothpick in center comes clean.
Dust with powdered sugar, serves 10-12.

One of the joys of staying at a Maryland Bed and Breakfast is the wonderful food you can look forward to in the morning. Here is a recipe shared with you from Danielle Hanscom, innkeeper at the Brampton Bed and Breakfast Inn in Chestertown.

Herbed Scrambled Eggs


This is a versatile and delicious breakfast dish that can be adapted to what is in season. It holds up well in a 180 degree oven or a chafing dish on a buffet. This recipe can be easily doubled.
For a simple breakfast I’ll use a mixture of just parsley or parsley and lovage and serve it with a side of smoked bacon.
To dress it up I’ll use just dill and add ribbons of smoked salmon on top.
For a summer breakfast I’ll use basil and serve it with a side of roasted grape tomatoes.
For a breakfast with an exotic twist add 1 tablespoon of curry and 1 tablespoon of finely chopped cilantro.

Serves 4

6 large eggs
4 oz. cream cheese
¼ cup light cream
½ tsp. sea salt
freshly ground pepper to taste
1 Tbs. unsalted butter
1  ½ Tbs. fresh herbs such as parsley, basil, tarragon, lovage, dill finely minced

In a small glass bowl microwave cream cheese for 20 seconds. You want the cream cheese to be very soft.

In a large bowl whisk together eggs, light cream, salt, pepper and one tablespoon of herbs.
Add cream cheese and stir together. It doesn’t need to be totally incorporated.

In a large frying pan heat butter over medium heat until it foams.  Stir in eggs and cook until small curds form. Approx. 7 min. Be careful not to let it brown.
Divide amongst 4 plates and sprinkle with the rest of the fresh herbs.
If it goes on a buffet I’ll put it in a chafing dish and sprinkle with the rest of the herbs.

Ocean City splendor

Two members of the MBBA are located in Ocean City Maryland.

The Inn on the Ocean, the name says it all, is an elegant 6 room inn where guests can enjoy the breath taking view of the Atlantic Ocean.

The Atlantic House B&B a comfortable 10 room inn with boardwalk and ocean views.

One of the attractions this summer will be the amazing, choreographed to music Beach Fireworks every Tuesday at 10 pm, June 12th – September 2, 2012.

Inspected B&Bs

When choosing a B&B it can be daunting to decide on a place that will live up to ones expectations. Looking at websites is the best way to get a first impression. One more thing that is very helpful is to know that a B&B belongs to an association that inspects all it’s member inns before admitting them.

The Maryland Bed and Breakfast Association was founded in 1992 and for the past 20 years all it’s members have undergone a regular and thorough inspection. For the past 4 years with the help of an outside inspector. When looking for the right B&B to stay in Maryland you will not regret having chosen a member inn. It’s a better way to stay!
